Going for the Gold

It all stemmed from inspiration from a teeny knob. A knob that took countless hours to find online a little over a year ago when we decided to give our armoir a facelift:





and then we found these to compliment the small drawers:

So, this inspired me to go for the gold; however in order to keep our room from looking like a King's fortress we decided to use the gold sparingly....well, kind of. Once Shawn told me about a new metallic paint his company was stocking, I knew we had to have it. So, last weekend we embarked on painting our bedroom GOLD?!?

And so, we are one step closer to completing at least one room in our house. We still need new lamps for the nightstand.

On the Hunt

I LOVE these chairs, and they would be PERFECT for our family room. BUT, they are way out of our budget. $1499 for ONE chair!?!



So, we are now on a full blown search for a good replica/alternative. So far, the only ones I've found are fake leather and much smaller (we need BIG, the room is HUGE). Wish me luck in my endeavors.

Oops, I Did It Again

Woot! I was able to serve another vegetarian meal and have a satisfied Husband! I came across this recipe a while back in none other than an issue of InStyle. It's been on my mind for a while, and since I've been on a cooking "kick" now was as good of time as any.

These little morsels are AH-mazing, AND not too unhealthy if you switch up the ingredients as I did.


Veggie Lasagna Rolls
Adapted from InStyle (Lea Michele and Mom Edith Sarfati's)

Ingredients:
2 Tbsp olive oil
1 large bunch broccoli, stems removed, finely chopped
1 cup chopped mushrooms
8oz baby carrots, chopped (about 1 cup chopped)
1 16oz box whole wheat lasagna noodles
16oz part skim ricotta cheese
1 clove garlic
1/2 tsp onion powder
1 tsp dried oregano
1 tsp dried basil
1 tsp freshly ground pepper
1 tsp salt
1/4 cup freshly grated Parmesan
2 cups shredded mozzarella cheese
24oz jar tomato sauce

Preheat oven to 350°F.  
  • In large skillet, heat olive oil and sauté chopped broccoli and carrots, mushrooms, and garlic until tender, about 7 minutes.
  • Place in large bowl and refrigerate until cool.  
  • Cook noodles, drain, and lay flat until cool.
  • Mix ricotta with onion powder, oregano, basil, and salt to taste.
  • Add ricotta mixture, Parmesan, and 1 3/4 cups mozzarella to bowl of veggies; mix well with spoon.
  • Using a spatula, spread ½ cup filling onto length of each lasagna noodle, leaving ½ inch at each end so roll-ups don't overflow; roll each one tightly.
  • Spread half of tomato sauce on bottom of deep baking pan; place roll-ups seam side down, top with remaining sauce.
  • Cook in oven for 45 minutes.  
  • Remove and top with remaining cheese; cook for 15 more minutes.  
Serves 6-8.

Meatless Mondays

Yes. I have gotten Shawn to eat vegetarian once a week. On my part it is for health, trying to incorporate more interesting vegetables and experiment with different proteins. I was able to convince Shawn by telling him that we would save lots of money.... We've actually been eating "meat-less" once a week for a while now, I just thought we'd make it more routine by dedicating a whole day to the cause (I'm fairly certain I'm the only one following this program throughout the day).

Tonight I made Tosca Reno's Lentil Stew. Delicious.

Soups On!

Tonight I made my Mom's Minestrone soup - so warm, fairly healthy, and delicious!



Mom's Minestrone

Ingredients
2 cups carrots, chopped
2 cups zucchini, chopped
1 head green cabbage, shredded
1 onion, chopped
2 cloves garlic, minced
4 links Italian Sausage (I used chicken sausage)
2 - 28oz cans stewed tomatoes
Small Pasta, like orzo 
Black Olives
Parmesan Cheese
Salt & Pepper

In a large pot, brown and thoroughly cook sausage in olive oil. Remove from pan; saute carrots, zucchini, cabbage, onion, and garlic in sausage drippings until onions are translucent, season with salt and pepper. Add sausage back to pot, add tomatoes and cook for at least 1 hour. If soup is really thick add wine, water or chicken stock to thin. Add pasta 20 minutes before serving, and then olives at the last minute. Sprinkle Parmesan cheese on top. (I added a Parmesan Rhine to the soup while cooking instead).

White Sale

A new year means a fresh start. And with all stores having MAJOR sales on linens, where better to start than the bedroom? I've started with new sheets, duvet cover, PILLOWS, and lampshades. I still intend on hanging up some eggplant drapes, recovering Stella's bed to match, and framing some wedding photos. Here is the progress so far (unfortunately I don't have any "before" photos).
