Traditions

My Family growing up always went to cut down our own Christmas Tree, so as we meld families we are now sharing this tradition with Shawn's side of the family as well. Every year on the day after Thanksgiving we go on the hunt for the PERFECT Christmas Tree (digital story below).

Thanksgiving

Our family has a lot to be thankful for, and this year as we do every other year we go around the table and share just what it is that we are thankful for. It was most definitely a theme shared without that we are all thankful for each other and that our family has grown into one big happy one!

Needless to say, no one went home hungry. We shared laughs, watched football, stayed up till 1am watching wedding videos, and ended the night with a sleepover. This was one of my favorite Thanksgivings I can remember.

3D

Woah! Andreas and I went to see MegaMind 3D this weekend, and not only was the movie really good, but the 3D blew my mind. Thing have changed a lot with 3D technology, I don't think I have seen a 3D movie since Captain EO with Micheal Jackson at Disneyland.

Easier than Pie

This is my new go-to recipe for cookies. Probably the easiest baking recipe I've ever attempted. Another plus - I always have the ingredients on hand!

Chocolate Dipped Shortbread Wedges
Adapted from the Better Homes & Gardens New Cookbook
Makes 16 wedges

Ingredients
1 1/4 cups all-purpose flour
3 Tablespoons granulated sugar
1/2 cup butter
1 cup milk chocolate chips

1. Preheat oven to 325* F. Combine flour and sugar. Using pastry cutter, cut in butter until mixture resembles fine crumbs and starts to cling. Knead until smooth and form into a ball.

2. On an ungreased cookie sheet, pat dough into an 8-inch circle. Make a scalloped edge. Cut circle into 16 wedges. Leave wedges in circle. Bake for 25-30 minutes or until bottom starts to brown and center is set. Recut circle into wedges while warm. Cool on cookie sheet 5 minutes. Cool on a wire rack.


3. In a double broiler, slowly melt chocolate chips. Dip large end of wedge into chocolate and let cool until chocolate hardens.

They weren't exactly the most beautiful things. I think next time I will go for more of something like this:

Chicken Soup for the Soul

Sundays are my favorite days to cook dinner - I usually have the entire day to shop, prep, cook and devour. I love soup; eating and cooking. I have had a chicken carcass in my freezer for about a month and it was time to get put to use before being replaced by that of a turkey.  And on this day of rainy weather and lack of a good football game I embarked upon my first attempt at homemade chicken soup.

Danielle's Chicken and Rice Soup
This involves a chicken carcass (or turkey) - put carcass in a large pot and cover with cold water. Bring to a boil and let simmer for 4 hours, or until all meat has come off of the bones. Strain the liquid and sort through parts to get as much meat as possible. Discard all bones, cartilage, skin, etc. 

Put chicken and liquid back into pot and bring back to a boil and add the following:
1 cup chopped onion
2 cups chopped celery (leaves included)
2 cups chopped carrots
1/3 cup chopped Italian parsley
1 large clove of garlic
1 cup chopped potatoes
1 Tablespoon salt
1/2 Tablespoon freshly ground pepper
1 Bay leaf

Let simmer for at least an hour. Add 1 cup rice (I used wild) and let simmer another 30 minutes. Add 1 cup frozen peas and let heat through.

*my chicken was cooked with lots of thyme and rosemary, which flavors came through when boiling down carcass.

Really time for a new camera :-(

New Obsession

I usually only indulge in tea in the evenings when I am trying to keep myself away from sweets....however this tea I am loving so much that I actually don't miss desert, and instead want to just savor every cup. I came across it at the grocery store, and it was a little bit like a calling, seeing as it's meant for detox (too much of a good thing, ahem...wine?). It claims that it helps your kidneys and liver function better and cleans them out - who knows if it's true. All I know is that it tastes darn good!



In case you can't read the fine print on the label, here goes it:

Had too much of a good thing? Feeling out of balance, a bit heavy or puffy? Then it's time to get clean. This gentle herbal blend helps the body help itself as it stimulates the liver, one of our natural cleansing mechanisms. Based on organic rooibos, it includes milk thistle seeds to sweep toxins away. Both dandelion and burdock roots help wake up the liver and get things flowing. Their cleansing properties encourage healthy digestion and help to keep the kidneys flushed. Fall Favorite

I don't know why brussel sprouts get such a bad wrap - I find them delicious and actually CRAVE them! Most of the time I just cut them in half and season with salt and pepper and saute in olive oil. However, last night I thought I would get creative....



Shredded Brussel Sprouts and Walnuts
1 pound brussel sprouts, shredded
1/2 sweet onion, chopped
1/2 cup coarsely chopped walnuts, toasted
olive oil
salt and pepper

Saute brussel sprouts and onion in olive oil until tender, about 4 minutes. Season with salt and pepper and add walnuts. Easy!

Holiday Wear

This year, instead of buying new holiday dresses - I'm buying shoes to accessorize my 100's of LBDs. I never have to worry about not fitting in my shoes, dresses are another story :-).

Purple Stride 2010

November is Pancreatic Cancer Month, and I have been doing my best to raise awareness. 

One of my dearest friends, Melanie was diagnosed with Pancreatic Cancer 4 years ago and is still alive to tell about it. This is a miracle. 5% of those diagnosed are alive after 5 years. 

This weekend was the Puget Sound Purple Stride Walk to raise awareness of Pancreatic Cancer - this is the 2nd annual walk, and what a difference a year can make. This year there was a HUGE turnout and we raised ALOT of money! 

Team Making Miracles came out in FULL FORCE!
